Happy Halloween friends! There's not too much going on in the Wolfe household tonight...I think we'll lay low and snuggle on the couch while the cats prance around the living room in their black fur coats...this is their special night after all.

the first snow is magical

It started raining right around 5pm yesterday just as they had predicted. I don't know exactly when the rain turned to snow, but when we woke up everything was white and fresh.
I knew it had snowed before I opened my eyes. There's a muffled quiet and a certain glow from the window that only snow makes. It really is magical and makes Christmas feel even closer.
The pine trees faired much better than others. The snow was wet and heavy and broke so many branches...my parents backyard looks like war zone and the poor cherry tree whose branches created such a beautiful arch above the walking path didn't survive. 
 I felt sorry for Martin as he left for work this morning, I guess someone might get a craving for a good sushi dinner on this cold night and he'll be there to make it.  I tried to stay warm today and snuggled on the couch piled with blankets and two black cats.  Our apartment felt cozy with the fall candles burning, the dryer going and Gilmore Girls on (thanks Mia!) We watched the snow falling outside the windows and I was determined to get all of my household chores done today while I was stuck inside.
 Tomorrow is already supposed to be much warmer and I'm sure the snow will begin to melt as quickly as it appeared.  Winter is just warming up for it's big show in a couple of months and I'm sure by then we will all be tired of our world around us being covered in white. But there can only be one first snow of the season and it always seems to put a little excitement into our spirits.

paleo chicken salad-- otherwise known as what I eat almost every day

This recipe was created especially for me by my Chef Husband...it's simple and tasty and Jessica tweaked. It can also be prepared ahead of time and eaten off of for days. 
The Recipe: according to me
  • Roasted chicken breast cut into tiny tiny pieces so it is hidden amongst the other ingredients
  • 1 bag of grapes cut into halves
  • About 4-6 celery stalks sliced into little pieces 
  • 2 spoonfuls of mayonnaise
  • Chill in refrigerator  
The other night, Sunday night around 10pm to be exact, I begged my husband to please make my chicken salad for me so I could go to bed and be well rested for school the next day. I told him he would do such a great job because cooking is his specialty.  The next day at lunch I dove into my lunch...what was that in my salad? A nut?! And why did it taste different?? Martin had tried to be fancy with my chicken salad...something he knows is a big no no. 

I think he secretly changed my recipe so I wouldn't ask him to make my chicken salad at 10pm anymore...he's very smart. Although the changes may not have been noticeable by the naked eye, I have the ability to tell the slightest differences in any recipe I have mastered...right mom? 

The Recipe: according to Chef Martin
  • 1 medium roasted chicken, skinned, and cut into small cubes  
  • 2 cups of halved grapes 
  • 1 cup diced celery
  • 3/4 cup of chopped Walnuts
  • 1/2 cup of Mayonnaise (enough to coat ingredients)
  • Pepper to taste
  • 2 T red wine vinegar
  • Chill in refrigerator

It's the weekend! Which means we're at the park...

My husband had another weekend day off! I could get used to this...we felt like normal people today enjoying a Sunday together lounging at the park and exploring the new Ikea. We found a spot on the grass amongst the geese and ate our Unwiches from Jimmy Johns. The park is always busy on a Sunday afternoon. I don't like to be busy at the park, I like to sit and people watch and take lots of pictures of Martin.
I think every tree was showing off its fall colors and the leaves were falling from the branches like snow. We enjoyed the warm sun knowing that by Wednesday we could actually have snow. Leave it to Colorado to be 70 degrees one day and snowing the next. 
Maybe it will be nice to have a few chilly snowy days during my break...it will force me to stay in, snuggled under blankets, watching my favorite movies...okay maybe I won't have to be forced
